Today we are going to Muse about speedy cooking.  If this is your first visit, welcome to Musings. If you have been here before, welcome back. Over time we are going to talk about many things: the past, the present, perhaps the future, travel, art, society and more. Wherever my musing takes me. I hope you will come along with me.

Hey, Whats Cook’n?

To eat or not to eat . . . it is not a question.  I like to eat.  Over the years I often did so to excess. Fortunately I seem to have it under control now, mas o menos.

My interest in food led me to cooking.  My wife, now deceased, had many talents and interests, but cooking was not one of them.  So over time I started to learn how to cook.

Like most  guys I could cook pancakes, eggs and bacon.  Those sort of things.  I was also good with the charcoal grill.  But more inventive cooking . . . I had never done that.  One day I was home from work.  It might have been a holiday or perhaps I was sick.  I don’t recall now.  But I was home watching television when Emeril Lagasse came on.  I had no idea who he was and I had never seen his program before but he was entertaining.

He was making a potato soup with Kale.  As I watched it suddenly came on to me, “Hey, I could do that!”  I quickly took notes and later toddled off to the store to buy potatoes onions and kale.  I did not even know what kale was.  I made the soup and was quite proud of my accomplishment.  It was pretty good.

So that was the start.  As time went on I became more facile and adventuresome.  Then I married Jeanette.  She is an excellent cook.  She has even attended cooking school.  She has helped me a lot.  When I am not fully in charge I often get to be sous-chef.  Today I am a reasonable amateur cook.

Time is the problem most people have with cooking I think. They do not want to take the time to cook.  It needs to be quick.

Some time ago I found this at a garage sale:  Readers Digest Quick, Thrifty Cooking.  It was published in 1985. This is not in the league of Julia Child but the recipes are surprisingly good and varied.  And I don’t think any take more than 30 minutes.  Can you still get the book?  Yes. I have seen it on Amazon.com.    You might give it a try.  I like it a lot.

And then there is the pressure cooker.  When I was a kid my mother had a pressure cooker.  It rattled and shook and the safety valve on top danced about, hissing steam.  It impressed me!  She used it often, but after we moved overseas I don’t recall seeing it again.  I had not  thought of a pressure cooker in years.

Then last year Cook’s Illustrated had an article on pressure cookers.  It explained that the cookers have been reengineered and are much safer and improved.  The article went on to say that whereas people tend to use microwave ovens in the U.S., in Europe people tend to use pressure cookers.  They greatly reduce cooking time and they keep all the nutrients in the food.

When Jeanette asked what I wanted for Christmas, I said I’d like a pressure cooker.  I think that offended her kitchen sensibilities.  She was not impressed with my wish list.  But we have one now, pictured above.   Fagor is the manufacturer.  It is a very useful kitchen tool.  So I recommend it.
