Today we are going to Muse about Osso buco and Panna cotta.   If this is your first visit, welcome to Musings. If you have been here before, welcome back. Jeanette sets a pretty table and cooks a splendid dinner.  That is what we did Saturday with a small group of our friends.

First we sent out the invitation.

Then several days in advance Jeanette planned the menu:

Roasted Red Pepper Soup

Osso buco with Saffron Risotto, onions and snap peas

Blood Orange Panna Cotta

Coffee, Cappuccino, Wine

Saturday we completed the food preparation.  Some of it had been done in advance.

We were set.  All we needed were the guests.  They arrived at the appointed time and we had a very pleasant evening with good company, conversation and food.

Several guests were unfamiliar with the dessert, Blood Orange Panna Cotta.  They really liked it.  So I will share the recipe with you.  I got it years ago from weight watchers so you know it is not fattening.

Blood Orange Panna Cotta

servings 9
Ingredients

3.75 cups fresh orange juice from about 18 blood oranges
2 2/3 teaspoons unsweetened gelatin
18 packets Splenda
1/3 cup sugar
10.5 Tbsp orange zest
1 cup Nonfat plain greek yogurt
1 tsp lemon juice
1 cup evaporated whole milk
cardoman seeds

Instructions:

Pour 1 1/2 cup juice in a medium saucepan: sprinkle gelatin over.  Let stand 15 minutes

Stir gelatin mixture over low heat until the gelatin dissolves, 1 to 2 minutes

Add 18 packets of Splenda and 7.5 teaspoons orange peel.  Stir until Splenda dissolves, 1 to 2 minutes longer.

Strain into medium bowl, pressing on solids.  Discard the solids left in the strainer.

Cool juice mixture 10 minutes.

Whisk yogurt, evaporated milk, and lemon juice into the orange juice mixture until smooth.  Divide among nine small goblets.

Chill until set, at least 4 hours ahead.

Stir 2 cups orange juice, 1/3 cup sugar, 3 teaspoons orange peel and cardamon in medium sauce pan over low heat until sugar dissolves.  Increase heat and boil until reduces to 9 tablespoons, 16 to 17 minutes.

Strain syrup into small bowl:  chill

Spoon some syrup over each Panna cotta and serve.
